It\u2019s s a complete protein, containing all 9 essential amino acids, and is gluten free.<br \/>\n<strong>Servings: 5<\/strong><br \/>\n<strong>Here\u2019s what you need:<\/strong><\/p>\n<ul>\n<li>1 cup roasted red bell peppers<\/li>\n<li>3\/4 cup white bean hummus<\/li>\n<li>2 cups chicken stock<\/li>\n<li>1\/2 cup cooked quinoa<\/li>\n<li>1 cup shredded rotisserie chicken<\/li>\n<li>dash salt and pepper<\/li>\n<li>2 Tablespoons parsley, chopped<\/li>\n<\/ul>\n<ol>\n<li>Take 1\/4 cup of the roasted red peppers, slice into strips and set aside.<\/li>\n<li>Place the remaining red peppers in a blender along with the hummus and chicken stock. Blend until smooth.<\/li>\n<li>Transfer to a medium saucepan. Add the quinoa and chicken.
