Enjoy the leftovers as a quick lunch or as tomorrow\u2019s dinner.<\/p>\n<p><strong>Servings: 8<\/strong><\/p>\n<p><strong>Here\u2019s what you need&#8230;<\/strong><\/p>\n<ul>\n<li>2 teaspoons olive oil<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>1 bunch of carrots, chopped<\/li>\n<li>2 onions, chopped<\/li>\n<li>1 bunch of celery<\/li>\n<li>1 fennel bulb<\/li>\n<li>1.3 lbs lean ground turkey<\/li>\n<li>4 cups veggie broth<\/li>\n<li>1 (14.5oz) can stewed tomatoes<\/li>\n<li>4 ears of corn, kernels sliced off cobb<\/li>\n<li>3 Tablespoons tomato paste<\/li>\n<li>2 teaspoons dried basil<\/li>\n<li>Dash of salt and freshly ground pepper<\/li>\n<\/ul>\n<ol>\n<li>In a large skillet heat the olive oil. Add garlic. Add chopped carrots, cover for 5 minutes. Add onions, celery and fennel. Saut\u00e9 until soft.<\/li>\n<li>In another skillet cook the ground turkey over medium heat until fully cooked, stirring often. Drain off excess fat.<\/li>\n<li>Transfer the veggies to large soup pot and add the remaining ingredients, and the cooked turkey. Cover and cook over low heat for 40 minutes.
