Serve with a side of vegetables and a salad.<\/p>\n<p><strong>Servings: 6<\/strong><\/p>\n<p>Here\u2019s what you need:<\/p>\n<ul>\n<li>2 eggs<\/li>\n<li>2 Tablespoons fruit-only apricot preserves<\/li>\n<li>2 Tablespoons Dijon mustard<\/li>\n<li>\u00bd teaspoon garlic powder<\/li>\n<li>\u00bd teaspoon red pepper flakes<\/li>\n<li>\u00bd cup almond flour<\/li>\n<li>\u00bd cup almond meal<\/li>\n<li>\u00bd cup coconut flour<\/li>\n<li>\u00bd teaspoon black pepper<\/li>\n<li>\u00bd teaspoon dried thyme<\/li>\n<li>\u00bd teaspoon sweet paprika<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>2 lbs boneless, skinless organic chicken tenders<\/li>\n<\/ul>\n<p>Preheat oven to 350 degrees F. Lightly grease a 13\u2033x9\u2033 baking pan with coconut oil.<br \/>\nIn a medium bowl whisk the eggs, apricot preserves, mustard, garlic powder, and red pepper flakes.<br \/>\nIn another medium bowl combine the almond flour, almond meal, coconut flour, pepper, thyme, paprika and salt.<br \/>\nDip each chicken tender in the egg mixture, then dredge through the flour mixture. Place in the prepared pan.<br \/>\nBake for 35 minutes.
