Serve on large butter lettuce leaves.<br \/>\n<strong>Makes: 8 Servings<\/strong> <!--more--><\/p>\n<p><strong>Here&#8217;s what you need&#8230;<\/strong><br \/>\nFor the Creamy Coconut Dressing:<\/p>\n<ul>\n<li>1 (14oz) can coconut milk, full fat<\/li>\n<li>1\/4 cup fresh cilantro, chopped<\/li>\n<li>1 Tablespoon apple cider vinegar<\/li>\n<li>1 Tablespoon coconut oil, melted<\/li>\n<li>1\/8 teaspoon garlic powder<\/li>\n<li>lemon zest (all you can get from one small lemon)<\/li>\n<li>1 teaspoon lemon juice<\/li>\n<li>dash salt<\/li>\n<li>dash pepper<\/li>\n<\/ul>\n<p>For the Salad:<\/p>\n<ul>\n<li>1 cup celery, finely chopped<\/li>\n<li>1 cup red grapes, halved<\/li>\n<li>1\/2 cup pecans, chopped<\/li>\n<li>1 apple, finely chopped<\/li>\n<li>4oz can mild chopped green chiles<\/li>\n<li>1 lb roasted chicken, chopped<\/li>\n<\/ul>\n<ol>\n<li>For the Creamy Coconut Dressing: Combine all of the ingredients in a medium bowl. Whisk well and then set in the fridge to chill while you prepare the salad.<\/li>\n<li>For the Salad: Combine all of the ingredients in a large bowl. Add the creamy coconut dressing and mix well. Season with salt and pepper.
