Isn\u2019t that pretty much like having a personal chef?<\/p>\n<p>Second, there\u2019s a lot of flexibility in the ingredients you can use in a recipe like this. Don\u2019t have butternut squash? Use pretty much any other type of winter squash or even sweet potato. Don\u2019t have chicken thighs? Sub in beef or pork. No onions but have a bunch of bell peppers? Chop \u2019em up and throw \u2019em in!<\/p>\n<p>Planning ahead by making dinner in the slow cooker is a fantastic way to stay on track with your healthy eating plan.<\/p>\n<p>Here&#8217;s a simple, delicious dinner that your whole family will love. Simply throw the chicken ingredients into the slow cooker in the morning, and come home to a healthy, flavorful meal.<\/p>\n<p><strong>Servings: 8<\/strong><\/p>\n<p><strong>Here&#8217;s what you need&#8230;<\/strong><\/p>\n<ul>\n<li>2lbs boneless, skinless chicken thighs<\/li>\n<li>3 bell peppers (any color), thinly sliced<\/li>\n<li>1 yellow onion, thinly sliced<\/li>\n<li>1 (4oz) can green chiles, chopped (I use mild!)<\/li>\n<li>1 (14oz) can diced tomatoes<\/li>\n<li>1 (16oz) jar green salsa<\/li>\n<li>4 cloves garlic, minced<\/li>\n<li>1\/4 cup cilantro, chopped plus more for garnish<\/li>\n<li>1 Tablespoon ground cumin<\/li>\n<li>1 Tablespoon chili powder<\/li>\n<li>1 Tablespoon fajita seasoning<\/li>\n<li>2 teaspoon sea salt<\/li>\n<li>1\/2 teaspoon black pepper<\/li>\n<li>Large lettuce leaves<\/li>\n<li>Avocado, sliced<\/li>\n<\/ul>\n<ol>\n<li>Combine all of the ingredients, except the lettuce leaves and avocado, in a slow cooker. Cover and cook on low for 5 hours.<\/li>\n<li>Remove the chicken thighs, shred with a fork, and mix back in. Serve, using a slotted spoon, on the lettuce leaves. Garnish with sliced avocado, chopped cilantro and a sprinkle of fajita seasoning.
